Asian Mahi Mahi with Coconut Rice and Mango Papaya Relish

Ingredients:
8 oz. Mahi Mahi1 Tbsp. Spice Bouquet Asian Dry Rub½ cup White Rice1 cup Coconut Milk¼ tsp. Spice Bouquet All Spice½ Mango, small diced½ Papaya, small diced¼ cup Red onion, diced3-4 Basil leaves, chopped4 ½ Tbsp. Carità Extra Virgin Olive Oil1 ½ Tbsp. Carità Balsamic Vinegar¼ tsp. Spice Bouquet Granulated GarlicSalt and Pepper to taste
Method of Preparation:

For the Mahi Mahi – Rub the Mahi Mahi with ½ Tbsp. Carità Olive Oil, then rub with Spice Bouquet Asian Dry Rub. Pan sear on medium-high heat for 3 minutes on each side. Then place in a 350 degree pre-heated oven for 4-5 minutes.

For the Coconut Rice – Bring coconut milk, rice, and Spice Bouquet All Spice to a boil. Cover and let simmer for 20 minutes. (or package directions)

For the Mango Papaya Relish – In a bowl, combine the mango, papaya, red onion, basil leaves, olive oil, balsamic vinegar, granulated garlic, and salt and pepper to taste. Cover and refrigerate for 1-2 hours for the flavors to infuse.
