Carolina Baked Country Sausage with Green Peppers and Onions

Ingredients:
2 Lbs. Carolina Country Sausage Links 4 Medium yellow onions peeled and sliced3 Medium to large bell peppers (green, yellow, and/or red) cored and sliced into stripsCaritá Extra Virgin Olive Oil
Method of Preparation:

Pre-heat the oven to 350 degrees. Cut the Carolina Country Sausages into individual links. Lightly oil a glass or metal baking dish with the Caritá Extra Virgin Olive Oil. Roll the sausage links in the oiled baking pan so that they have a thin coating all around.

Roast the sausages for 20 minutes. Then turn the sausages over and roast for an additional 20 minutes. The internal temperature of the sausages should be 160 degrees. Remove the sausages from the oven and let them cool on a paper towel lined dish.

Meanwhile, sauté the onions in a large frying pan at medium to medium-high heat for 5 minutes. Then add the sliced peppers to the pan with the onions and sauté for about another 20 minutes until the peppers are fully cooked but still a little crisp. (Green peppers work fine, but the red and yellow peppers will add a little color to your end dish.) Keep turning the onions and peppers in the pan gently while they are cooking.

Cut the sausage links into slices – about ¾ inches thick. Combine the sausage slices with the sautéed onions and peppers and heat under medium heat, turning the sausages, onions, and peppers gently as they warm up.

Serve with pasta with an oil and garlic sauce or with a butter and parmesan cheese dressing.
