Athenian Chicken
| Ingredients: |

| 1 Whole chicken cut into 1/8ths or 4 lbs chicken parts |

| ¼ Cup Caritá olive oil |
| ½ Cup lemon juice |
| ¼ Cup water |
| 3 Tbsp. Spice Bouquet Greek Seasoning |
| 2 Lbs. of new potatoes cut into ¼ or 1/8 depending on size |

| Method of Preparation: |

Wash the chicken and pat dry with a paper towel. Rub the olive oil liberally over the chicken. Place the potatoes and chicken into a baking dish and pour the water and lemon juice into the dish. Sprinkle with the Spice Bouquet Greek Seasoning. Roast covered in a 350 degree oven for 45 minutes. Uncover and roast at 400 degrees for 15-20 minutes until potatoes and chicken are tender and lightly brown or with internal temperature of 170 degrees.
Serve with broccoli and carrots .Yield: 6-8 servings
Yield: 6-8 servings garlic, and salt and pepper to taste. Cover and refrigerate for 1-2 hours for the flavors to infuse.
