Beer Can Chicken with Greek Dry Rub

Ingredients:
2-3 Chicken1 sm Potato or Onion12 oz. Can Beer, Soda, Juice1 Tbsp. Carità Extra Virgin Olive Oil or as needed¼ cup water1 Beer ChickCan RackSpice Bouquet Greek Dry Rub
Method of Preparation:

Clean and wash a whole chicken, removing giblets from cavity. Pat dry with towel. Rub about 1 Tbsp. of the Carità Extra Virgin Olive Oil on the outside of the chicken. Generously apply the Spice Bouquet Greek Dry Rub to the outside of the chicken. Using the can of your beer, soda, juice, or water, pour out about ½ of the contents. Place the can of liquid inside the ChickCan Rack.

Place the chicken over the Rack and can of liquid. Stuff a small potato or onion in the neck cavity to seal in the vapors. Place the chicken in a pan and add ¼ cup of water to the pan. Place pan into a 350 degree oven.

Cook chicken for about 2 hours or until skin is a dark golden brown. Using a meat thermometer, check the internal temperature of the meat. Temperature should reach about 180 degrees in the thigh.

When done, let stand for about 5 to 10 minutes. Drain the liquid by laying down the chicken on its side in the pan. Pull rack out and transfer the chicken to a plate.
