Citrus Salad
Ingredients:
Mixed Green Salads and additives (red onion, tomatoes, etc.) of your choice
Caritá Extra Virgin Olive Oil
Caritá Balsamic Vinegar
Orange
Lemon
Method of Preparation:
While many store bought salad dressings are very good, you can make a variety of excellent salads and salad seasonings at home using Spice Bouquet seasonings and Caritá Extra Virgin Olive Oil, Balsamic Vinegar, and Red Wine Vinegar.
The base recommended mixture is 2 parts Olive Oil and 1 part Balsamic Vinegar or 1 part Red Wine Vinegar. It is not recommended that you mix Balsamic Vinegar and Red Wine Vinegar in any salad seasoning.
The quantity of oil and vinegar to mix will depend on how many servings you wish to make. For example, a mixture of 1 cup of oil and ½ cup of vinegar will give you approximately 10 servings. If you mix 1 tablespoon of olive oil and ½ tablespoon of vinegar, you will have a single serving.
Generally speaking, you would add ¼ cup of seasoning to 1 cup of oil and ½ cup of vinegar (Balsamic or Red Wine) for most salad dressings, more or less to suit your taste. If you add cayenne or crushed red pepper as one of your seasonings, start with a very small amount and increase in tiny steps to taste.
• Store bought salad dressings tend to have very high sodium levels, while the following home made dressings can be very low or no salt. Also, your home made dressings can be prepared so that the flavors will lend very nicely with your main dinner dish.
• For the Citrus Salad, take the orange and cut into wheels. Cut off the rind and cut the orange wheels into halves. Add to the salad greens. Take the lemon and squeeze the juice over the salad.
